It's a traditional favorite to South Carolina & Georgia. It's just not enjoyed at breakfast but can be devoured for lunch & dinner as well. We hail from North Carolina, and I can tell you while we may didn't cook Shrimp & Grits we often had Grits, Liver-mush & Eggs. Doesn't that sound nice.  You can have a healthy infused omelette with all kinds of veggies, or one mixed with meats such as: ham, bacon, sausage or fish bits. Or what about a sweet omelette topped with syrup? While a boiled egg may be the healthiest egg to eat an omelette isn't a bad choice to add to your diet plan. (See your diet restrictions).  Omelette's are easy to make, done within minutes & it's a great way to get rid of leftovers before food shopping trips.  If you've never tried to make them on your own know this, it's 10% ingredients and 90% technique.
